Football season is in full swing and if you’re anything like us then that means watching games with some yummy food. However, if you’re also anything like us then that means that you spend more time watching the game then where your food is going and that can get a bit messy. Cue the Mini Taco Salads I decided to make one weekend. Not only are the cute enough to be in your football weekend Instagram pic but they’re small enough that they can be eaten in a few small bites cutting down on the possible mess!
Ingredients for the Mini Taco Salads are fairly easy; you’ll need some soft taco shells to make the bowls (I prefer the Old El Paso Grande Tortillas), a meat/protein seasoned for tacos (we prefer beef and we season ours with our own seasonings), and any toppings you may want like sour cream, cheese, or guacamole!
Making the bowls is super easy! All you have to do is take one of your shells from the Old El Paso Grande Tortillas pack and using a 3 1/4″ cookie/biscuit cutter go around the outer edge and middle of the tortilla cutting out circles, I was able to get 7 circles with my ring. Once that is done you spray a muffin pan with some spray and place each circle into a section bunching the sides as needed. Pop these into a 350 for about 12 minutes.
These are what the shells look like once they have baked. If you prefer yours a little less done I would try checking them around the 8 minute mark. We decided to go with the full 12 minutes because the Hubs likes things like this to have a bit of crunch to them plus the ones that were in the full time seemed to have a bit more flavor with the shell than ones that were pulled out a bit sooner. However, it is completely up to you how done you get them, that’s the beauty of this recipe!
Once the shells have cooled a bit you can then fill them with whatever you like. As I mentioned before we used beef that we seasoned on our own, some sour cream, some freshly shredded cheese, and some fresh guacamole but whatever you use is up to you! The Hubs wound up liking these so much that he’s already planning on having me make them for the “Big Game”!
