One of the things that we’ve been trying to do since starting our diet is to incorporate healthier foods into our diets. Before going on our diets last April, if we were having chicken breast for dinner it was probably either fried by a restaurant or by us. Since April though we’ve tried other methods of cooking them like baking and pan searing. Our favorite way is to put it in a casserole as it makes this Easy Cheesy Chicken and Veggie Casserole a cinch to make.
One of the things that we like about the Easy Cheesy Chicken and Veggie Casserole is how customizable it is. While you need a few base ingredients, how those ingredients come are completely up to the baker. The main ingredients are rice, vegetables, chicken, cream of mushroom soup and cheese. To customize ours we used brown rice instead of white as it’s not part of our diet plan, we used a bag of mixed Green Giant vegetables to make sure we were getting a good mix of veggies, for the cream of mushroom soup we saw this new roasted garlic flavor at the store and decided to pick it up and for the cheese we will sometimes pick up lactose free cheese instead. Not pictured we also bought a box of Green Giant frozen broccoli to go with the mixed vegetable as we wanted a bit more broccoli than what was in this bag.
Even the cheese sprinkled over the top is totally customizable. We chose to sprinkle ours on the top once it came out of the oven and let it melt a bit while it cooled. We did this because we didn’t want all the cheese to be super gooey we wanted some of it to have a bit of firmness to it. If you like a more gooey cheese on top then you can totally add it in the last 5 minutes of cooking. Or you can skip the cheese on top all together if you’d rather have it all mixed in.
I absolutely love how customizable and how easy the Easy Cheesy Chicken and Veggie Casserole is. Once we had all the ingredients together it took us only five minutes to put them into the bowl, stir them around to make sure everything was incorporated and then spread it into a greased casserole dish. Plus, bonus Jonas, as this will feed 4 – 6 people for the Hubs and I that means we get dinner for several nights off of it. Score!
