In a few short weeks it will be Thanksgiving so the Hubs and I were starting to plan out exactly what we wanted to do for Thanksgiving. For the past few years we haven’t really gone the traditional route with the turkey, stuffing, etc. and each year we’ve wanted to change it up just a bit. This year while we were trying to come up with what to do about Thanksgiving we decided to start with sides and we came up with Glazed Cranberry Biscuits.
As soon as we had the idea we though it was a good one, however, with school and the blog I just did not want to spend the time during Thanksgiving break fixing biscuit dough. For all of those of you out there who do more power to you but on my break I want to actually take a break so I started thinking of shortcuts. I then had the thought of using Pillsbury canned biscuits and placing dried cranberries into the dough. Genius!
I’m not even kidding once you substitute the Pillsbury canned biscuits instead of going from scratch things get a lot easier. I just pushed some dried cranberries, you can use fresh or frozen, into the tops, bottoms, and lifted the biscuits in the middle and placed some in there as well. I then baked the biscuits per the can instructions and then let them cool for a minute. Now you can serve these as is with your Thanksgiving dinner or…
You can make a simple glaze using some confectioners sugar, water, and vanilla to drizzle over the top. These will make them sweeter and more of a dessert option as opposed to the more savory option from before. You can even have a little of both at your table, it’s up to you!
