I first heard about Chipotle from a friend who went to one every chance they got. Living in the back country I had to ask “You mean like a Moe’s?”, which is the only non Taco Bell/Taco John’s burrito place I had ever heard of. I was promptly told that there was a big difference between Chipotle and Moe’s and I had to try Chipotle’s SOON. A few months ago the Hubs and I ventured up to Columbia and drove right past a Chipotle on our way to Jimmy John’s. I immediately had him turn around and begged for a us to go there and give it a go. At first the Hubs was a bit wary, especially once he saw those prices, but when I turn on my “Pretty Please” eyes he can’t say no to me. We bought a burrito for him and a burrito bowl for me, ate lunch, had enough left for dinner, and were very pleasantly surprised (oh and now I get why the “Guac is extra” stuff is so funny). So why do DIY Chipotle Burritos at home? Well because Columbia is two hours away, bit to far just for a Chipotle fix, and with both of us going back to school we’re on a bit of a budget and sadly Chipotle just doesn’t fit into that budget.
These are so stinking easy that I’m not even going to put it into recipe format. Essentially, we took three chicken breasts and put them into a crockpot with a bit of chicken broth (just enough to come to the edge of the chicken) some minced garlic, chili powder, cumin, salt, pepper, and cayenne pepper. We let those cook for about an hour and 45 minutes, until just done, and then shredded the meat. We then took an Old El Paso Fajita kit that comes with rice and black beans and put that part into the crockpot with all the juices to cook up and absorb some of the flavor. While that cooked up we shredded some fresh cheese and made some guacamole with a seasoning packet and two Avocado from Mexico branded avocado’s. Once the rice and beans were done we popped the shells into the microwave for a minute and then started building the burritos.
As I said, easy peasy lemon squeazy. Once the shells and rice with black beans are done it all is just about building it either how you want it or how it would be done in the store. We started with our chicken on the bottom, the rice with black beans next, some salsa (our store was out of pre-made pico de gallo and we were on a time crunch so we had to go with the jarred stuff), a bit of lettuce, fresh shredded cheese, sour cream, and of course the guac.
These turned out UHmazing. Are they just as good as Chipotle? I’ll say that if you live two hours away from a Chipotle and are on a budget they are! We’ll for sure be doing this again!
