As many of you may know in December 2015 I received a Celiac diagnosis, which means that I have to stay away from gluten. We won’t go into the details of what happens when I have gluten but we’ll just say that it isn’t pretty. Due to the fact that we live in a small town this means that a lot of my favorite dishes like pizza and pasta are off limits and this is especially bad when it comes to holidays like Valentine’s Day and our anniversary.
In 2016 we came to the conclusion, or decision, that most restaurants were just going to have to be off limits to us. This meant that while this would open more meal options to us we would actually have to fix the meals. However, after a few meals we came to the perfect conclusion; we can cook the meals together and enjoy them together. One of our favorite meals to fix together on “special days” is Gluten Free Seafood Alfredo. This can be as easy or as homemade as you want it. The basic ingredients that you need for the Gluten Free Alfredo are some kind of pasta and seafood. We like to use Barilla® Gluten Free Pasta, which is actually a newer edition to our pantry, and any imitation lobster that is gluten free.
Now the reason that I said those are the basic ingredients is because the sauce that you use is up to you, this is also where the difficulty change comes in. If you want homemade you’re going to need more ingredients and this will take the difficulty up. However, if you’re like us then a jar of flavored Alfredo sauce, like the Barilla Garlic Alfredo Sauce, will be more than enough.
This was actually the first time that we had used the Barilla Alfredo Sauce and these were actually just introduced at our local Kroger in Aiken, SC. Actually I do want to mention something now that I’ve brought up the store. Our Kroger actually has a natural and gluten free food section that is separate from the other aisles. Most of the specific gluten free items like brown rice pasta etc. are usually located in this section. However, the Barilla Gluten Free Pasta is actually with the regular pasta. This concerned us at first thinking that it might not actually be gluten free, however, Barilla Gluten Free Pasta is certified gluten free!
After we were brave enough to try Barilla Gluten Free Pasta the first time we actually haven’t gone to a different brand since! The Barilla Gluten Free Pasta is honestly one of the BEST gluten free pasta’s that we have tried. The Hubs likes that it’s an authentic Italian food brand that is supposedly the #1 choice of Italy and that it is high quality, wholesome, and simple…I, on the other hand, just like the fact that it tastes great and that it doesn’t clump when we cook it!! Seriously, that is a problem with just about every other gluten free pasta that we’ve tried!
We are actually planning on having the Gluten Free Seafood Alfredo for dinner on Valentine’s Day this year. We’re planning on cooking it together, enjoying it together with some red cream soda, and having a few mints after as a just in case! Check out the recipe below for exactly how to put this together.
